The Sutherland Shire is a region rather than a suburb, and the difference shows up the moment you try to plan a job here. It runs from Bate Bay and the Cronulla beaches west across Woolooware Bay and the Taren Point flats, north along the Georges River past Sylvania and Oyster Bay, up the Woronora River to Como and Bonnet Bay, and south to where the streets simply stop at the boundary of the Royal National Park. The Kingsway threads the middle of it through Miranda and Caringbah, which is where the shops, the offices and most of the unit blocks are. Almost everything else is houses: freestanding, on blocks with a lawn behind them, a good many with a river or a bay at the bottom of the garden. For a mobile oven that is close to ideal ground, and it is why a Shire enquiry usually ends up in a backyard rather than a hired room.
Our base is in Meadowbank and the Shire is 35km away, which makes it one of the longer runs we do. There are three usual ways in: the Princes Highway over Tom Uglys Bridge into Sylvania, the Captain Cook Bridge and Taren Point Road across from Rockdale, or the highway down through Sutherland itself. Once across the river the Kingsway and President Avenue carry most of the traffic, and both are heavy on a weekend, so the drive gets built into the schedule rather than the other way around. Be aware also that the southern and eastern parts of the region sit at the outer limit of our standard service area — Cronulla, Bundeena and anything out past Grays Point in particular. We will not pretend that costs nothing, and we will not guess at it in an email: any travel is worked out for your actual address and written into the quote before you agree to anything.
The oven wants level ground of roughly three metres by three, somewhere the vehicle can get close, open sky above it rather than a pergola or a verandah roof, and one 240V outlet. Sylvania Waters supplies all of that without discussion: the canal blocks are flat filled land, the lawn runs down to a jetty, and the driveways are wide enough to work from. Gymea, Kirrawee and the older streets around Miranda are much the same. The Woronora River villages are the opposite case. At Como, Bonnet Bay and Oyster Bay the sandstone falls away hard from the road, driveways pitch downwards at an angle, and the garden the party is in can sit two flights of steps below the front gate. An oven does not go down steps. On those sites we set up at street or driveway level and the pizza does the walking instead.
Out on the peninsula the constraint changes again. Cronulla, Woolooware and the streets behind North Cronulla and Wanda are open to the north-easter that comes in off Bate Bay through the summer afternoons, and it tends to arrive about when a party is finding its feet. We angle the oven so the heat and smoke travel away from where people are standing, and we stand it on paving, decking or firm ground, because loose dune sand will not carry the weight of loaded equipment. Bundeena is the genuinely awkward one: the ferry across Port Hacking from Cronulla wharf takes passengers, not vehicles, so an oven can only reach the village by road through the Royal National Park. Anything inside the park boundary is the park's ground rather than a backyard, and needs their permission before it needs ours. Say so early if that is where you are, and we will establish what is possible first.
The events have a recognisable shape here too. A Shire party starts in the middle of the afternoon, in the backyard, and it is still going well after dark. Summer is the season that matters — the run from November through March, Christmas, the Australia Day weekend — with milestone birthdays, engagements, christenings and end-of-season nights for the local sporting clubs around it. The weekday version is a staff lunch at one of the business estates around Taren Point or Caringbah, set up in a car park instead of on grass. A five-hour party is precisely what the oven suits, because it cooks right through instead of delivering one load that then goes cold. The dough ferments 48 hours and is opened by hand, the tomatoes are San Marzano, the mozzarella is fior di latte, the fire is held above 400°C and a pizza is out of it in about 90 seconds. Somebody arriving at eight eats what the three o'clock crowd ate.
The figures are plain. Classic is $22 per guest and Premium $30; every booking carries a single $400 service and setup charge covering the oven, the fuel, the crew, the setting up and the pack-down; GST goes on top of the subtotal. Twenty guests is the smallest booking we take; the upper end is practical rather than fixed, and a list past a thousand is quoted the same way. Gluten-free bases and vegan cheese cost nothing extra, and halal ingredients are prepared on request — that is how we cook it for you, not a certification this business holds. Hurstville and the St George suburbs are one bridge north of here, the Illawarra the other way past the park, so a booking that shifts across either boundary is no trouble. Send the date, the address, the guest number, the dietary list and a line about the ground — flat, sloping, or down a set of steps — and a written quote comes back with the travel stated on it.
