Behind the peel is Salvatore, who trained in Naples and has more than twenty years' experience as a private chef and pizzaiolo. Being based in the City of Ryde helps here too, in a way that is easy to overlook: a 48-hour dough is at its best inside a fairly narrow window, and a short trip from Meadowbank means it reaches your event still inside that window, rather than after an hour of Sydney traffic.
