Lasagna or Lasagne — Either Way, It Travels

Both spellings are correct. Lasagne is the Italian plural, describing the sheets of pasta themselves; lasagna is the singular, and the spelling that stuck in Australia and the United States for the finished dish. Search either and you will land here, so we are not going to be precious about it.

What matters for catering is that lasagna is one of the few dishes that genuinely improves under the conditions an event imposes on it. It is built in a tray, it holds its structure while it sits, it reheats without collapsing, and it can be cut to whatever portion size the table needs. Most dishes are compromised by being made in advance and held warm. Lasagna is not.

We buy it in as a finished tray rather than making it in our own kitchen, and we would rather say so plainly than imply otherwise. Papa is a Sydney Italian bakery that has been producing this kind of food at volume for a long time, and a tray built by a production kitchen holds together better over a four-hour function than one built to order and then held warm.

Serving Lasagna at an Event

Lasagna wants to rest before it is cut. Straight out of heat it will slump when the knife goes through; given ten to fifteen minutes it firms up and cuts into clean squares that hold their shape on a plate. Every experienced caterer builds that rest into the run sheet, and it is the single thing that most changes how the dish looks on the table.

Portion size is a decision, not a fixed number. Cut small and lasagna behaves like one dish among several on a buffet. Cut large and it becomes the meal. We will cut to whatever the rest of your menu calls for — tell us what else is going out and we will size the squares to match.
