About Pizza Catering in Campsie
Campsie eats in public. Beamish Street runs down from the station past Anzac Square and it is Korean barbecue and banchan on one block, Lebanese bakeries turning out manoush and trays of knafeh on the next, Chinese grocers, Vietnamese bread shops and charcoal chicken in between, most of it open late and all of it busy. The street food festival shuts the road once a year and pulls people in from across Canterbury-Bankstown. What Campsie has rather less of is the thing pizza catering usually assumes: a large private backyard. Between the station and the Cooks River the housing is dense — three-storey red-brick walk-ups from the sixties, newer apartment blocks along the main road, townhouses on subdivided blocks — with freestanding houses and real lawns only in pockets towards Canterbury and Hurlstone Park. So catering here is less often a backyard job and more often a hall, a park or a building's common ground, and that changes the practical questions entirely.
The drive is 18km from Meadowbank, down through Concord and Burwood and across Canterbury Road, so we plan around traffic rather than distance and build the setup time in accordingly. At your end, three questions cover nearly every Campsie booking. If it is a community, church or club hall, the oven stands outside, in the car park or on the grass beside it, and we carry the pizza in; a live fire does not go inside a building and no hall manager would want it to. If it is an apartment block, the approval you need is not ours but your strata's — a ground-level courtyard or an open podium works, whereas anything you would have to reach through the building itself does not. If it is one of the reserves along the Cooks River, the space is booked through council, and that is the piece most people leave until last. Otherwise we need firm level ground and open sky. We bring our own heat; nothing is plugged in or connected.
Pizza suits the Campsie occasions that happen away from home: engagement parties, twenty-firsts and community functions — hall bookings with a hundred or more people, cultural and religious association nights, school and place-of-worship fundraisers, and courtyard gatherings organised by a building rather than by one family. There is a good reason pizza works at these. In a suburb where nearly every household cooks something better than a caterer could, ordering in your own cuisine invites a comparison nobody wins, and the safest choice at a mixed gathering is food that belongs to none of the guests in particular. Wood-fired pizza is common ground. Korean, Lebanese, Chinese and Greek families at the same hall all eat it, teenagers eat a great deal of it, and grandparents who will not touch an unfamiliar dish will happily eat a margherita. It also sidesteps the hall problem, which is that a hall kitchen is usually a hot water urn, a sink and a servery hatch. We do not use the kitchen at all.
Beamish Street has already made the argument for live fire: charcoal at the Korean tables, bread ovens behind the Lebanese bakeries, chickens turning over coals in a shop window. Our oven belongs to that family of cooking. It holds above 400°C, hot enough to blister a rim and quick enough — ninety seconds a pizza — that the base sets before the topping has any chance to weep. The dough underneath has fermented for 48 hours and is opened by hand, never rolled, and that long ferment is why it still eats lightly at the end of a hall function that started at four. Buffalo mozzarella and San Marzano DOP tomatoes go on it. Salvatore cooks it in the open, in front of everyone: trained in Naples, more than twenty years of it as a private chef and pizzaiolo. In a car park that visibility earns its keep, because the fire is the only thing to look at.
In a hall or a strata courtyard somebody is usually dividing the cost, so the price has to be a number a committee or a family group chat can work with. It begins at $22 per person, plus a flat $400 service and setup charge and GST on the subtotal. The floor is 20 guests, which is the figure that decides whether a small courtyard gathering is worth booking at all, and generally it is, because twenty people in a Campsie courtyard is a full evening. From there the same service reaches past 1,000 for a hall function, staged in waves so that food keeps arriving through the speeches instead of landing in one lot at the beginning and cooling while somebody is still talking. Halal options, gluten-free bases and vegan cheese cost nothing extra, which is not a footnote in a room where halal, vegetarian, vegan and gluten-free eaters are all standing in the same queue and can all see who planned for them.
Canterbury, Belmore, Lakemba and Hurlstone Park are all on the same trip, so a hall one suburb over or a reserve on the far bank of the river changes nothing about the arrangements. We bring the oven and its wood, the ingredients, the equipment and the people; setup, cooking and pack-down sit inside the booking, which counts for more at a hired hall than anywhere else, since hall hire almost always carries a cleaning condition and a bond behind it. For a quote, send the date, the guest number, the dietary breakdown and a line on the space — hall car park, park, apartment courtyard or backyard. Where a council permit or a strata sign-off is needed, we will tell you what to ask for and who normally grants it. The quote comes back in writing, and asking costs nothing at all.
