About Pizza Catering in Penrith

Penrith is the last piece of Sydney before the land goes up. From the western end of High Street the Blue Mountains close off the view, and a short walk the other way puts you on the Nepean, with Emu Plains sitting on the far bank. The Great Western Highway and the M4 both run through, which is how the rest of the city gets here and, more to the point for a trailer with an oven on it, how we do. Panthers occupies its own site on Mulgoa Road with a lake beside it. North of town the old quarry land has become Penrith Lakes and the regatta course. South you have Jamisontown and then Glenmore Park, east Kingswood and St Marys, north again Richmond. Penrith has a centre and a river rather than a continuous run of streets, and the parties people throw here happen on ground that reflects that.

The one fact that most changes how we work in Penrith is the climate, and it cuts both ways. This is reliably the hottest corner of the Sydney basin in summer: far enough inland that the sea breeze arrives late or not at all, and a January afternoon in a backyard here runs several degrees past whatever the city forecast said. Our fire runs above 400 degrees Celsius, so out here the question of where the oven stands is a decision rather than a default. We put it downwind of your guests and, if the site gives us the option, on the shaded side of the house, under an existing tree or beneath a shade sail that is already up, so the fire is not adding to the afternoon. We would also usually rather start service at six than at four, and will say so. Winter reverses the argument entirely. Clear, still, inland nights out here get genuinely cold in a way the coast does not, and on those the oven becomes the reason people stay in the garden instead of moving indoors.

A good share of Penrith gatherings happen at the river rather than at a house. Tench Reserve and Regatta Park both sit on the Nepean at the town end, the walkway runs along the bank, and the Yandhai Nepean Crossing takes people over the water to Emu Plains. Those are council reserves, and commercial catering on them needs permission from Penrith City Council, which is a conversation to start early rather than late. We will supply whatever documentation the application asks for, but the approval has to be in your name. What we need on the ground is small: a spot a vehicle can reach without a long carry, three metres by three metres of level ground, open sky above the flue, and a single 240V point. No gas line, no kitchen, no plumbing.

At home the blocks out here are simply bigger than what we work with closer in. A newer estate house in Glenmore Park generally has a driveway you can park on and a yard with enough clear ground to stand the oven eight or ten metres from the nearest table, which on a hot evening is worth more than it sounds. The semi-rural properties towards Castlereagh and Mulgoa bring their own considerations: gravel or grass rather than hardstand, and a long approach worth describing to us beforehand. Summer brings one more thing that inner suburbs rarely have to think about. On the bushland edge a total fire ban is a live possibility, and a wood fire is a wood fire under those rules the same as any backyard one. We watch the forecast through the hot months and raise it with you at the start of the week rather than on the afternoon itself.

The method does not change for the trip west. Dough ferments for a full 48 hours before it is stretched by hand at the bench; the tomatoes are San Marzano, the mozzarella fior di latte, the fire above 400 degrees Celsius, and each pizza in and out in around ninety seconds. Penrith heat does have one consequence worth mentioning, because it is the sort of detail that separates a February booking here from the same booking beside the harbour: dough proves considerably faster at 38 degrees than at 22. On the hottest days we bring it out colder, keep it shaded and work through it steadily across the service instead of letting trays sit warming in the sun. That is our problem to manage, not yours, but it is why the last pizza of the night tastes like the first.

Penrith is 55km from our base at Meadowbank, most of it motorway, and the run is priced before you commit rather than after: travel is $0 inside our standard service area, and anything past it appears as its own line in the written quote.
