Baulkham Hills sits on a ridge and the ground falls away from it in most directions. Windsor Road runs along the top of that ridge and meets Old Northern Road at the junction the suburb has been organised around since its orchard years, while the land to the west drops towards Toongabbie Creek and the land to the east drops into the bushland of Bidjigal Reserve along Darling Mills Creek. Between those two edges are the streets where events actually happen: Crestwood, Model Farms, the pockets either side of Seven Hills Road, mostly brick houses from the seventies and eighties on blocks wide enough for a pool and a covered alfresco area, and very often split across two or three levels because the block underneath was never flat. For a mobile wood-fired oven that gradient is the first question of any Baulkham Hills booking, ahead of the guest count and well ahead of the menu.
The run from our base in Meadowbank is 28km, out along the M2 and off at the Windsor Road interchange, and the suburb sits inside our standard service area, so travel adds $0 to the quote. What we ask about is the last thirty metres. The oven wants a patch of about three metres by three metres, firm and level: the paved apron of a driveway, a courtyard slab or a compacted turning circle holds it far better than turf that has had the sprinklers on all week. Nothing solid can sit overhead, so a roofed pergola, a shade sail or a low branch rules a position out. Steep driveways are the local catch, a garage tucked under the house being common on these blocks, and where the slope is too sharp we stand the oven at street level and carry pizza down instead. We bring fuel, water and benches; a 240V point is useful for lights on a winter evening and for nothing else.
Norwest is the other half of the catchment and behaves nothing like a back garden. The business park spreads from Norwest Boulevard through Century Circuit, Solent Circuit and Lexington Drive around the lake, and since Sydney Metro opened at Norwest and Bella Vista those buildings fill and empty on a train timetable, while Baulkham Hills itself still has no station of its own. Corporate work there is a scheduling problem before it is a cooking one. A staff lunch has a hard window, usually noon to two, and the fire has to be lit, settled and producing before it opens. Ground-level courtyards, landscaped forecourts and a roped-off row of car park bays all suit an oven; a basement dock does not, because a fire cannot burn under a slab. Building or strata management will normally want notice of an open flame on the property, so name that contact when you enquire rather than on the morning.
The residential side of the suburb asks for something different again. The Hills has large Indian and Chinese communities, and on a Baulkham Hills guest list that regularly means a third of the room eating vegetarian, beef or pork off the table entirely, and halal treated as the default rather than the exception. None of it is hard when it arrives with the booking. What comes off the peel is Neapolitan. Its dough has 48 hours of fermentation behind it and is stretched by hand, never rolled; the tomatoes are San Marzano, the cheese is fior di latte, and the fire is held past 400°C so a pizza clears the oven floor in about ninety seconds. Across a long Hills afternoon that rate matters more than it sounds: one oven serves without a queue forming behind it, and food reaches a spread-out garden in a trickle instead of one cooling batch. The Classic menu is $22 a guest and the Premium is $30, both before GST. Every booking also carries one flat $400 charge for service and setup, and GST is added to the subtotal at the end. Twenty guests is the smallest job we take, and above that there is no practical ceiling short of 1,000 and beyond.
Bella Vista, Norwest, Winston Hills and Kellyville are all the same trip, so an event that shifts one suburb across is no different for us. If yours is on public ground, such as a booking at Ted Horwood Reserve or a field or hall at Balcombe Heights Estate, the permission is the organiser's to arrange with The Hills Shire Council, and it is worth starting early: the council's conditions decide where a vehicle may stand and how far an open flame must sit from a building. For everything else an enquiry needs five things: the date, the suburb, an estimated guest count, the dietary list, and two lines about the ground under the oven — driveway, paving, lawn or car park, how level it is, and how far a vehicle has to stop from it.
